Myosotis Popovers

This recipe is one of my Great Aunt's scribblings from a card stuck in a very old recipe book.  I know that Lake Myosotis is by Rensselaerville, NY and possibly that is where her friend lived that gave her this.

Myosotis Popovers

2 eggs
7/8 cup of milk
1 tbsp. of melted butter or shortening
1/2 cup of flour
1/4 tsp. of salt

Preheat oven to 450 degrees and heat greased iron cups.  Beat eggs; add butter and milk.  Blend in flour and salt.  Beat mixture 2 minutes by hand.  Bake 14-15 minutes at 450 degrees, then 5 minutes at 350 degrees.  Remove cups immediately.  Eat up hot!

--I do believe this recipe was baked in her cast iron muffin pan.
