Peanut Butter Surprise Popovers

Sorry the pictures aren't as clear this time.  These popovers are done using the same basic popover recipe except that after you put the batter in each cup you plop in about 1/2 tablespoon or so (depending what you like) of peanut butter.  We baked a few versions in separate cups but all at the same time and heat and found that the buttered pan ones just seemed to be tastier with the peanut butter.  We also tested different peanut butters and the creamier ones are the better tasting as well.  Just be careful not to burn your mouths on these lovelies :)  Oh and beware:  less creamier peanut butter cups will take less time or you will notice some over crispness on the tops of them.

Basic recipe:
1 cup of all purpose flour
1 cups of milk (whole is better)
1/2tsp salt
2 eggs                              Yields about 6 popovers at about 110-120 calories each

Mix dry and wet ingredients separately.  Add in wet to the dry beating about 2 min., not too long.  Room temp. batter makes for better popovers.  Liberally grease pan with butter or other (use muffin pans to popover pans but your bake time can vary, also use oil or butter to grease the pan with).  Bake at 450 for 20 min. (oven MUST be preheated) then without opening the oven, turn the heat down to 350 and bake another 20 min.  Serve hot!
